It was my turn to cook tonight, so I made this for dinner. I used a well-worn LeCreuset oval casserole dish instead of a cast iron skillet. It was simple to make and turned out absolutely delicious (we also used chicken broth instead of water). The Chilau Garlic Pepper seasoning was milder and a bit sweeter than I expected, but the Chilau Southern Red Rice turns out to be a lot spicier than we expected. Next time I make this I will probably use a blend of 50% plain jasmine rice and 50% Southern Red Rice.
Those brown bits that stick to the pan after cooking is called “fond.” You can deglaze with wine or vinegar. We can also cook our onions or other vegetables in it for extra flavor. That new kitchen backdrop is lookin good AB…😊👍
