  • I love Green Beans, and a lot of folks would say I cook them to death. I use my Mom's method. Fresh or canned, put them in a pot with a piece of sidemeat or strick-o-lean. I'm in Florida now, so I can't get that, but I use something similar called jowl bacon. Also, a spoon of sugar, she would have eyeballed it. Cook them on the slowest simmer with the lid on and leave them on for at least 12 hours. I'll often let them cook all day and then put them in the fridge, and then simmer them some more the day I plan to serve them. Salt and pepper to taste. They'll end up coming out dark and taste somewhat meaty.
