SO well done on these Joe~ will always prefer these over store bought, regardless of urge for convenience at times. Speaking of which, it's super easy to triple (or more) this recipe, form 3 separate balls of dough, wrap tightly & freeze. Then when we want some crackers, just pop one out & let thaw. So quick to roll out & bake from there, plus we maintain portion control~ versus baking a triple batch, storing them in an airtight, & trying to stay out of them….clearly, been there & learned.
Just made them and they are awesome! I flipped them and kept them in the oven on convection for a few extra minutes to maximize the crispiness. How would you store them so they stay crispy?

I made a version of these when I first starting eating Keto at the beginning of the year because my 18 year old daughter was going on a school trip and she wanted to have Keto snacks. I found the same thing as you, simple was better. I made mine by melting the cheese in the microwave and then I mixed in the almond flour and then rolled it out. I also pre-scored mine before I baked them so great minds think a like. I feel a connection with you Joe because I love experimenting in the kitchen and we now have a whole spreadsheet of recipies we like and use regularly.
I made these to take with us for snacking before our Thanksgiving meal. I could not get over how EASY and DELICIOUS they were! Thanks, Joe, for sharing your recipes with all of us!

These came out great! I had to put them away to keep from eating them all…I also made your flaxseed crackers the other day and liked THEM also…I DID use brown flaxseed…is there a huge difference with the gold ones you used?
