If you like Kung Pao, you can’t go wrong with this new Lemon Garlic Kung Pao Chicken. It’s a recipe that combines classic flavors with a few new ingredients to make it healthier. These chicken thigh bites are full of a zesty but mild Kung Pao flavor. There are some vegetables and chicken broth (of which I would actually like to use!) so there is nothing that is weird about it. If there is one problem, maybe my measurements. They are approximate and need tweaking but it’s a small mistake.
I had some chicken thigh breast yesterday and I decided to use them to make more of the meal. It worked very well and made a nice, hearty meal, but I had some of the left overs to get creative with so I gave those to my little one as well and she loves it too. We were also experimenting with something for lunch today, which I will blog about separately. I’m all about the left overs and this meal that doesn’t need its next day. If there is a dish that turns into three or four meals the next few days, I am always a fan and excited to know how the new meal came out.
Speaking of the last day leftover meal, we had a potluck on Sunday and everyone brought a dish. My Lemon Garlic Kung Pao Chicken Thighs Recipe was a smash!
