Directions:
In a large skillet with non-stick spray or oil, add the bacon and chopped onions, carrot and and celery. Transfer the vegetables to a large stockpot, add in the bacon fat, then add the minced garlic and cook for a few minutes, stirring with the vegetables. Add in the red peppers, green peppers, and the water and beef broth. Cook over medium heat until you see moisture coming from the bottom of the pan. Once the moisture has cooked off (this could take 15 minutes or more), add in the shrimp, stir, and continue to cook until just cooked through and pink (2 -3 minutes). While the shrimp are cooking, add in the rice and stir for a minute or so until heated through.
